Best healthy muffins Butternut squash apple cranberry







1 cup cooked and blended butternut squash

2 eggs

2 TBSB butter or oil melted

1 teaspoon vanilla

1/2 cup honey, maple syrup or candeluna syrup(from @northernfields)

1 1/2 cups of half oat & half almond flour

3 TBSP of flax seed ground(optional but a good binder)

1 teaspoon of baking soda

1/4 teaspoon of baking powder

1/2 teaspoon salt

1 1/2 teaspoon cinnamon

1 cup of chopped apples

1/2 cup fresh frozen or dried cranberries

optional 1/2 cup walnuts, chopped


1. Preheat oven 350 and butter your muffin cups or use liners

2. Combine dry ingredients

3. Make a well in dry ingredients and mix in all wet ingredients

4. Fold in apples and cranberries and nuts if using

5. Bake 350 for 20 to 24 min
