The Easiest Recipe I know

You know when you have a big squash sitting staring at you, and you have no idea what to do with it. Here is your solution. Easy, peasy, & delicious.


Butternut Squash Soup


*Cut it in half

*Take seeds out

*Roast at 400 deg for 45 min(check for softness) with some oil & salt & pepper(I used ghee-clarified butter)

*Let cool a bit to handle & peel off skin with paring knife

*Add squash in cubes to a blender(skip this if you have an immersion blender)

*Add in 1 can of coconut milk & Pulse till smooth in blender

*Return to pot

*Add in some curry powder or curry paste to taste

*Use immersion blender to make smooth if you did not use blender above t

*Heat & serve

*Delicious along side a steak!!
